After the ... company hamburgers!

A great leftover meal after hamburgers and taco dip appetizer...

This is a series for cooking called After the....

It refers to making a second meal from the first. Not exactly the old leftover idea as you may cook more on Meal 1 to do Meal 2 but similar concept to streamline meal planning and material buying.

I love an appetizer.  For our birthday bash this week, it was simply a taco dip by stirring up:

Dump Taco Oven-heated Dip:

2 cans refried beans, 1 small jar salsa, 1/2 cup any cheese shredded (yellow or hot jack), 1/2 cup chopped onions (from frozen bag is fine),1 tablespoon each(cumin, chili powder, garlic powder) 1 teaspoon each (salt, smoked paprika {if you have it}). Add any hot sauce you like to taste (or just use a hot salsa) 

Stir all up, spread in long casserole in a shallow layer, and top with more cheese (1 cup), Heat on 350 degrees for 15 minutes. Take out and add spoons of sour cream across top and place with corn or tortilla chips for your company to dip onto dessert paper plates and enjoy.

Hamburgers generally mean I will cut a plate of toppings: onions, tomatoes and lettuce. Always have some leftover.

Now put the two together-

I always keep some sort of tortillas as you can place most leftovers in or even only cheese for a fast warm burrito. I fried those up in the oil from cooking fries for the burgers.

I smear dip onto the fried tortillas and added them to a hot oven on a cookie sheet for 5 minutes.

I chopped the remaining vegetables and pulled out remaining sour cream and shredded cheese and top the hot tortillas.

See pics attached.  (If you do not fry much and did not do french fries, heat your tortillas in foil in the oven and then use all mentioned as fillings and roll into burritos for Meal 2.)

While this may seem seriously simplified, it is supposed to.  Turning a big deal meal into a second needs to take very little thinking about the ingredients you still have.

My Mother (Mom of 6) said thinking of what to prepare was her biggest pet peeve of cooking so here's to you, Mother!!

If you are thinking, well my broods eats all in the first meal, then serve up the dip and then put away the extra during the meal instead of leaving it out.
